Bold, bitter, and beautifully chewy. Dried balloon flower root is one of Korea's most distinctive pantry ingredients — earthy, a little bitter, and deeply aromatic. One hundred grams, one ingredient.
What it is
Doraji, harvested in Korea and dried with care. Drying does something fresh root cannot: the texture turns chewy and the aftertaste grows longer and deeper. That is why dried doraji is what Korean kitchens reach for when they want the root to hold its own in a seasoned side dish, a slow soup, or a long-brewed tea.
How to prepare it
Soak the dried roots in cold water for about one hour to soften them and mellow the bitterness. Rinse well under running water three to four times. Squeeze out the excess water, cut into bite-sized pieces, and it is ready — stir-fried as doraji namul, simmered into soup, or steeped as tea.
