How to Cook 100% Barley Noodles

Because these noodles are made only with barley, they behave a little differently from wheat noodles. A bit more water, gentle stirring and proper rinsing will give you the best texture.

  1. Fill a wide pot with plenty of water and bring it to a rolling boil.
  2. Spread the noodles gently into the boiling water and stir well for the first few minutes so the strands do not stick together.
  3. Once the noodles have softened, you can lower or turn off the heat and let them sit in the hot water for a few more minutes until they reach your preferred texture.
  4. Drain through a strainer and rinse thoroughly in cold or ice water 3–4 times to remove excess starch and firm up the noodles. Avoid rubbing the noodles as you rinse; simply wash them well.
  5. Serve in a light broth, as a cold mixed noodle dish with vegetables and sauce, or with your favorite toppings.
