Produced by a 4th-generation family farm in Pyeongchang, these noodles are part of a long tradition of turning local grains into everyday comfort food. Barley is naturally rich in dietary fiber and contains a type of soluble fiber called beta-glucan, which has been widely studied for its role in supporting heart and metabolic health when enjoyed as part of a balanced diet. Here, that nutrition comes in the form of noodles that feel both rustic and modern at the same time.
The barley used in these noodles is grown in the clean, cool climate of Pyeongchang, Gangwon-do, an area known for its highland grains. Pyeongchang Farm manages the process from cultivation to processing and packaging, focusing on clean ingredients, careful drying and consistent quality.
Because the noodles are made with 99.7% barley and 0.3% refined Korean salt, without any blended wheat flour, the flavor is noticeably different from typical wheat-based noodles. You get a gentle roasted grain aroma, a pleasantly chewy bite and a clean, refreshing finish that pairs beautifully with light broths and simple sauces.
Because these noodles are made only with barley, they behave a little differently from wheat noodles. A bit more water, gentle stirring and proper rinsing will give you the best texture.
Tip: The water used to cook the barley noodles develops a mild grain aroma. Instead of discarding it, you can use it as a base for stews or soups, or allow it to cool and use it as a gentle cleaning water for dishes to help reduce detergent use.
