When the mornings turn

In Korea, the seventh of September is called Baengno — White Dew. It's the day the calendar admits what the mornings already know: the heat has left, and the grass wakes up wet.

Nothing dramatic happens. You just reach for something warm a little earlier than you did last week.

This is the shelf for that hour — teas, roots, and syrups that have been part of the Korean table when the season turns. Brewed hot in the morning, or stirred into water at the end of a long day.
