Korean black bellflower root — doraji — steamed and dried nine times until it turns dark, then concentrated to 60% solids. One ingredient, nothing added. A thick, bittersweet spoonful.
What it is
Doraji is one of the oldest roots on the Korean table — served as a seasoned side dish, brewed at home, kept in the pantry through winter. This jar holds Korean-grown doraji put through gujeung-gupo: nine rounds of steaming and drying. With each round the pale root darkens, and its sharp edge softens into a deeper, rounder bitterness.
How it's enjoyed
A suggested serving is one teaspoon (3g) once a day. Take it straight from the spoon, or stir it into a cup of warm water. The bitterness is still there; it is supposed to be.
60% solids · One ingredient
The label lists a single ingredient: gujeung-gupo black bellflower root extract, concentrated to 60% solid content. No sweeteners, no preservatives, no artificial colors or flavors — thick enough to coat a spoon.
The taste people grew up with
For many Korean families this flavor is memory: a grandmother's kitchen, a dark jar on a high shelf, a spoon offered without explanation. It is not a mild flavor, and that is the point.
Keeping it
Store the unopened jar in a cool, dry place. Once opened, keep it in the refrigerator and finish it within 60 days.
